Nostalgic for the Basque Country, this Christmas Eve was all about Basque flavours. My menu was inspired by Euskal Herria – both el pais vasco and le pays basque:
– Basque chicken with espelette pepper and piperade sauce
– Pastel vasco with cherries and cream cheese ice cream (ideally I would have used Idiazabal cheese but had to manage with cream cheese!) In my haste to tuck in I forgot to take a photo, ahh classic mistake – but a good excuse to make it again soon.
